Guest lecturer in Gastronomic Management

On 25 February 2026, the Business Manager of Tapestry Coach delivered a guest lecture to students of the Gastronomic Management course within the Master of Tourism programme (KGNM_TRTA128). His presentation examined the strategic relevance of reducing employee turnover in hospitality organisations, stressing the operational and managerial risks posed by persistently high turnover levels.

Mr. Kóbori identified three primary determinants of employee retention: organisational conditions, leadership qualities, and external contingencies. Organisational factors include fair remuneration, transparent policies, realistic business objectives, and ethical governance frameworks. Leadership factors encompass managerial style, personality traits, adaptability, and the ability to recognise and utilise employee competencies.

The third determinant – external contingencies – refers to influences outside managerial control, particularly the business’s geographic location and the impact of external crises, both of which significantly shape labour stability.

Overall, the lecture offered a concise yet insightful overview of the interconnected organisational, managerial, and environmental factors that affect employee retention in the hospitality sector.
